100g (4 oz) buckwheat flour
1 pinch of salt
4 tbsp warm water
2 tbsp of olive oil

1. Mix the flour with salt and water. Let the dough rest for about ten minutes.
2. Heat the oil in a non-stick frying pan and pour three spoonfuls of batter trying to form a round pita.
3. Cook the pita on both sides until golden brown.
4. Serve the pita (hot or cold) with favourite filling.
