This quick bread is made with baking powder. Ideal for soups and cheeses. Taste, colour and texture resemble the famous Soda Bread.

150g (5 oz) plain flour
350g (12 oz) wholemeal flour
1 egg
2 tbsp extra virgin olive oil
2 tsp of baking powder
1 tsp salt
60g (2½ oz) oat flakes
Approximately 300ml (10fl oz) low-fat milk

1. Mix the two flours, oat flakes and baking powder (possible sifted) in a large bowl.
2. Beat the egg and mix it together with oil, salt and half of the milk, flour; stir into the flour mixture initially with a fork then by hands. Add the remaining milk little by little. Mix well, knead and shape a round dough.
3. Cut a cross in the top using a knife.
4. Put the dough on a non-stick baking tray and bake at 200C/400F/Gas6 for 10 minutes then lower the temperature to 190C/375F/Gas5 for 30 minutes. Remove from oven and let cool on a wire rack. To maintain the bread soft, wrap it in a kitchen cloth.
