250g (9 oz) plain flour
125g (4½ oz) butter, softened
125g (4½ oz) icing sugar
2 egg yolks
Zest of 1 lemon
1 pinch of salt
Cold milk

1. Mix the icing sugar with the flour in a large bowl.
2. Add all the ingredients and make a quick dough shaped into until a ball; cover with a clean kitchen tea towel and leave in the fridge for 30 minutes.
3. Roll out the dough with a rolling pin to make cookies, cakes, tarts or pies.
