You can use this homemade custard filling for fruit tarts, pies, sponge cakes, trifles and other desserts. If you need to make it lighter, reduce the number of eggs or simply use one.

500ml (17fl oz) milk
4 egg yolks
125g (4½ oz) caster sugar
50g (2 oz) plain flour
Vanilla pod
Zest of half lemon

1. Pour a little bit of milk in a pan, add the flour and stir well to remove any lumps.
2. Add all the remaining ingredients and bring to a boil, stirring constantly, until creamy. Add more flour if the custard doesn't have the perfect density.
3. Let cool before using.
