Homemade flat bread, shaped into tortillas, made with only 3 ingredients: spelt flour, water and oil. Easy to cook in a non-stick frying pan without using any cooking oil. A great solution if you do not have fresh bread at home.

200g (7 oz) spelt flour
100ml (3½fl oz) water
2 tablespoons of olive oil
Salt and black pepper
1. In a large bowl mix flour, water, salt, black pepper and oil. Make a dough (shouldn't be too sticky) using your hands on a lightly floured working table.
2. Shape the dough into small balls about 5cm (2 in) in diameter.
3. Roll out each dough ball with a rolling pin into the shape of tortilla (you will need to use lots of flour for rolling them out).
4. Cook the tortillas at high heat using a non-stick frying pan until golden brown on both sides. Once cooked, place them in a large tray and cover with cling foil to keep them soft until ready to serve.
