500g (1lb 2 oz) fresh strawberries (or cherries or apricots)
500g (1lb 2 oz) fresh milk
50g (2 oz) icing sugar
150g (5 oz) plain flour
Finely grated zest of 1 organic orange
1. Wash the strawberries, remove all the leaves, and put them (halved) at the bottom of a 25cm(10in) buttered cake tin.
2. Beat eggs, sugar and orange zest in a large bowl until soft and creamy. Add all the milk.
3. Incorporate the sifted flour. Mix well together.
4. Pour the liquid mixture over the fruit and bake at 180C/350F/Gas4 for 40 minutes. Let cool before serving.
