This is a fantastic recipe: a classic sponge cake flavoured with orange and poppy seeds. If you like, once the cake is cooked and cooled, cut in two dishes and spread some homemade orange marmalade for a tangy and refreshing touch.

300g (10½ oz) self raising flour
120g (4½ oz) caster sugar
50g (2 oz) butter, at room temperature
Freshly squeezed juice of 2 organic oranges
Finely grated zest of 1 organic orange
40g (1½ oz) poppy seeds
1. Whisk butter, sugar and eggs in a large bowl until light and creamy.
2. Add orange juice and zest.
3. Tip in flour and poppy seeds. Mix everything together, then pour the mixture into a 25cm(10in) buttered sponge cake tin.
4. Bake for 30-40 minutes at 180C/350F/Gas4. Let cool before serving or filling.
