 Apple cake with lemon and yogurt butter-free

This is my mom recipe in which I have added some yogurt. Despite being without butter, the cake remains soft and fabulous even the day after. It's one of my favourites.

250g (9 oz) self raising flour
100g (4 oz) caster sugar
2 eggs
125g (4½ oz) plain yogurt
3 apples, chopped
50g (2 oz) raisins or sultanas
Finely grated zest of 1 lemon
Freshly squeezed juice of 1 lemon
Brown sugar for garnish

1. Wash, peel and core the apples; cut into small pieces and place in a bowl with lemon juice.
2. Soak the raisins to in a cup of hot water for 5 minutes, then rinse and drain.
3. Beat the eggs with the sugar in a large bowl until soft and creamy; add lemon zest, yogurt and raisins. Sift over the flour and stir gently to give a smooth, soft mixture. Add the apples with all the juice.
4. Grease a 26cm (10½in) cake tin, pour in the mixture and sprinkle the top with brown sugar. Bake at 180C/350F/Gas4 for 40 minutes until golden.
