A cake with a few simple ingredients, without eggs and butter, and incredibly soft.

200g (7 oz) self raising flour
180g (6 oz) caster sugar
50g (2 oz) cocoa powder
250ml (9fl oz) milk
100g (4 oz) chopped walnuts
Icing sugar for garnish

1. Sift the flour in a large bowl, add sugar and cocoa. Pour the milk little by little until the mixture is creamy and soft.
2. Add the chopped walnuts (alternatively you can use almonds, hazelnuts or pine nuts).
3. Mix well together and pour into a rectangular cake tin (greased with butter or folded with a greaseproof paper). Cook at 180C/350F/Gas4 for about 25 minutes. Let cool before serving and dust with icing sugar. Cut into squares and serve.
