250g (9 oz) self raising flour
125g (4½ oz) natural white yogurt
100g (4 oz) caster sugar
50g (2 oz) walnuts, coarsely chopped
60g (2½ oz) butter, melted
2 eggs
Finely grated zest of 1 organic lemon
Icing sugar
1 pinch of salt

1. Whisk eggs and sugar in a bowl until soft and creamy. Add yogurt, lemon zest and melted butter.
2. Stir in the flour and salt. Mix well to give a smooth, soft mixture.
3. Add walnuts.
4. Pour the mixture into a greased 26-28cm (10-11 in) cake tin and bake at 180C/350F/Gas4 for 40 minutes.
5. Remove from the oven and let cool before serving. Sprinkle with icing sugar.
