Butter-Free Apple cake with Yogurt and Lemon (230 kcal per serving)

250g (9 oz) self raising flour 
100g (4 oz) caster sugar 
2 eggs 
125g (4½ oz) low fat natural yogurt 
500g (1lb 2 oz) peeled apples (3-4) 
40g (2 oz) raisins 
1 organic lemon (juice+zest) 

Tools: 26-28cm (10-11 in) cake mould 

1. Remove the zest of the lemon using a grater and set apart.
2. Chop the apples into small pieces and place them in a bowl with the lemon juice.
3. Soak the raisins to in a cup of hot water for 15 minutes, then rinse and drain.
4. Beat the eggs with the sugar in a large bowl until soft and creamy; add lemon zest, yogurt and raisins. Sift over the flour and stir in gently to give a smooth, soft mixture. Add the apples with all the lemon juice.
5. Grease a round cake tin of 26-28cm (10-11 in) diameter, pour in the mixture and bake at 180C/350F/Gas4 for 40 minutes until golden.
