The dough is made of Ricotta cheese and Rice flour with a minimum amount of sugar. Use fresh plums if possible, although the dry-pitted ones work just as well.

150g (5 oz) self raising flour
50g (2 oz) rice flour
150g (5 oz) ricotta cheese
1 egg
80g (3 oz) caster sugar
10 ripe fresh plums
Juice of ½ lemon
Sliced almonds to garnish
1. Peel the plums, cut into small pieces and marinate with the juice of half a lemon.
2. Beat the egg with sugar and ricotta cheese until soft and creamy.
3. Stir in the flours. Mix well then add the prunes and the juice.
4. Lightly grease a 20cm (8 in) cake tin, pour the mixture into the tin and sprinkle the top with sliced almonds. Bake in preheated oven and cook for 35 minutes at 180C/350F/Gas4 or until the top is golden.
5. Remove from the oven and from the mould. Let cool before serving.
