Ricotta is like a magic ingredient, makes everything good, soft and fragrant. This cake is soft and tasty with chunks of dark chocolate and bits of orange zest.

300g (10½ oz) self raising flour
250g (9 oz) ricotta cheese
100g (4 oz) caster sugar
2 eggs
100g (4 oz) good quality plain dark chocolate
Low fat milk
Grated zest of 1 organic orange

1. Coarsely chop the chocolate.
2. Beat the eggs with sugar, ricotta cheese and orange zest to make a smooth and creamy mixture.
3. Add flour and mix well until the dough is soft (add some milk if necessary).
4. Stir in the chocolate. Pour the dough into a lightly greased cake tin (25cm/10 in). Cook at 180C/350F/Gas4 for 35-40 minutes until the top is golden.
