A loaf of homemade mascarpone bread full of nuts and dried fruits. Looks good sliced like bread. Perfect for breakfast, snacks and goodies after dinner.

Recipe for 1 bread loaf
Preparation: 15 minutes
Cooking time: 50 minutes
Total time: 1 hour and 5 minutes

300g (10½ oz) self raising flour
250g (9 oz) mascarpone
2 eggs
110g (4 oz) caster sugar
100g (4 oz) mixed nuts and dried fruits (walnuts, pine nuts, apricots, raisins)
Milk to mix

1. Beat the eggs with a whisk then incorporated sugar and mascarpone. Mix well until smooth and no lumps are visible.
2. Add flour and milk. Mix well together to form a soft dough.
3. Stir in fruits and nuts.
4. Butter a rectangular bread tin and pour the mixture in. Cook at 175C/325F/Gas3 for about 50 minutes. To check if the dough is perfectly cooked, insert a long wooden stick or skewer into the middle of the cake. If the stick comes out sticky, keep cooking for another 10 minute.
5. Remove the bread from the oven and from the tin. Let cool on a wire rack and serve the sweet bread cut into slices.
