Yesterday evening I wanted to make a fruity cake, fat-free and without spending too much time in the kitchen. I ended up using an old mammy recipe, her traditional apple cake. I replaced apples with pears, then adding a few tablespoon of ginger preserve. A truly scrumptious treat!

Preparation: 15 minutes
Cooking time: 40 minutes
Total time: 55 minutes

250g self raising flour
2 large ripe pears, peeled and cubed
1 egg
70g caster sugar
4 tbsp ginger preserve
Half glass of milk

1. Peel the pears and cut in small pieces, place them in a bowl with ginger preserve. Mix well together.
2. Beat egg and sugar then add flour and milk. The mixture should be soft and not too runny.
3. Incorporate pears and ginger. Mix well and pour into a buttered large cake tin. Cook at 180C/350F/Gas4 for 40 minutes. Let cool completely before serving.

NOTE: For this recipe I used Tesco Finest Ginger Preserve.
