An easy banana bread made with self-raising flour, eggs, butter, walnuts and raisins. A fragrant homemade sweet bread perfect for snacks, breakfast and after dinner.

250g (9 oz) self-raising flour
100g (4 oz) caster sugar
2 eggs
100g (4 oz) raisins
50g (2 oz) soft butter
25g (1 oz) chopped walnuts
3 medium ripe bananas
1 pinch of salt
1. Soak the raisins in warm water for five minutes, then drain.
2. Beat eggs and sugar in a large bowl, then add the butter. Beat until well blended.
3. Stir in flour and salt. Mix well the ingredients.
4. Add walnuts, raisins and bananas mashed with a fork. Mix well for a few minutes.
5. Grease a rectangular plum-cake mould; pour the mixture and bake in a hot oven for about 50 minutes or until the bread turns golden brown at 180C/350F/Gas4. Once cooked, remove the bread from the mould and let cool before serving.
