Recipe for a small cake, not too sweet and slightly flavoured with lemon zest and pears. It is quick to prepare and can be ready in 45 minutes only.

150g (5 oz) self-raising flour
50g (2 oz) caster sugar
1 egg
40g (1½ oz) sunflower oil
Zest of half a lemon
A pinch of salt
2 small pears
1. Whisk the egg in a bowl with sugar then incorporated oil, lemon zest and a pinch of salt.
2. Add the flour and a little bit of milk to make soft dough.
3. Peel the pear and cut into small pieces. Incorporate to the mixture and mix gently.
4. Pour the mixture into a non-stick round cake pan 20cm (8 in). Cook at 180C/350F/Gas4 for 30 minutes or until golden brown. Let cool before serving.
