These cookies are inviting and very crunchy. Oat flakes are perfect for the preparation of yummy cookies. With this recipe you can make about 40 medium-sized thin biscuits.

100g (4 oz) self raising flour
100g (4 oz) oat flakes
1 egg
80g (3 oz) soft dark brown sugar
50g (2 oz) butter, melted
2 tbsp raisins

1. Melt the butter over low heat and let cool for a few minutes.
2. Soak the raisins in hot water for five minutes, then drain and set aside.
3. Beat the egg with the sugar until the mixture is smooth and creamy.
4. Stir in oat flakes and butter. Mix well together.
5. Add the flour and raisins. Mix all ingredients until the dough is soft and sticky.
6. Line two or three baking sheets with parchment paper. Arrange small balls of dough (using a teaspoon) quite apart from each other. Cover with cling film and flat the balls with your fingers to shape very thin round biscuits. Pull the plastic wrap away and repeat the steps until the dough is finished.
7. Bake all the trays together or just two at a time for about 12 minutes at 180C/350F/Gas4. Remove from oven and let cool on a wire rack. When all the cookies are baked, turn off the oven and put them back on wire rack for five minutes so that they become perfectly crispy.
